Like Vietnamese, Chinese and Japanese people, the Korean eat with bowls and chopsticks; The cuisine is largely based on rice. The Korean meal is by appearance like Vietnamese one, but actually, it has some special characteristics.
Meals for the Korean are accompanied by numerous legumes, Kim chi, a fermented, spicy vegetable dish. Korean cuisine usually involves heavy seasoning with sesame oil, soy sauce, salt, garlic, ginger, red chili paste. Kimchi is commonly fermented in a brine of ginger, garlic, scallions, and chilli pepper. There are endless varieties, and it is served as a side dish or cooked into soups and rice dishes. Koreans traditionally make enough kimchi to last for the entire winter season.
Kim chi is made of various vegetables and contains a high concentration of dietary fiber, while being low in calories. One serving also provides up to 80% of the daily-required amount of vitamin C and carotene. Most types of Kim chi contain onions, garlic and peppers all of which are salutary. The vegetables being made into Kim chi also contribute to the overall nutritional value. Kim chi is considered as a healthy food choice. In Korea, there are many Kim chi-producing companies. Kim chi has been exported to many countries such as China, the USA, Japan and so on. Kim chi cannot be missed in Korean meals.
In addition, Korean ginseng is also very popular for Korean meals. Korean ginseng is a deciduous perennial herb with typical light colored fleshy root. The taste of the Korean ginseng root is sweetish at first but with a bitter aftertaste. Besides, ginsengs are soaked in brandy to make ginseng drink, which can be enjoyed by itself or it can be a perfect complement to any meal as it improves appetite and warms the body. Korean ginseng is available as powder of the whole root, as cut and dried roots and as liquid or powder extracts.
Korean meals are very special for a wide variety of ingredients such as mushroom, beans, seaweed, herbs...Like Vietnamese people, Koreans are also adept at using chopsticks. Korean food is traditionally eaten with stainless steel chopsticks and served at a low table with people sitting on the floor.
